Two dessert lovers teamed up to share Megan’s treasure trove of healthy recipes. We are passionate about baking sweet treats that are vegan, gluten-free and paleo with zero refined sugar, high protein and no dairy for weight loss and endurance that help us live a non-diet lifestyle by eating real food.

Meet Megan Matthews

Baking Scientist
Vegetarian, Animal Lover, Gardener and Athlete

All recipes for Sweets You Can Eat are based on my 35-year journey of eating and baking unprocessed, non-dairy, real food that fuels my active life and satisfies my sweet tooth. I’m lucky to live on a mountain farm, producing organic fruit and berries from my orchard that inspire my baking delights. I have cracked the code of how to bake treats that taste better than those made using animal fats, processed sugar and regular flour. My husband used to love buttery, white muffins and cakes until he had a massive heart attack. So I set out to make the best cookies, muffins, cakes and energy bars that rivaled any store-bought version and I made them with zero refined sugar, zero dairy, and zero gluten.

People ask me to be their “baking fairy godmother” and supply them with batches of goodies they CAN EAT! So, I promised to write out my recipes and share them with you! My goal is to change everything you know about baking, inspire you to eat real food and never say no to desserts.

Meet Patricia Schroeck

Chief Executive
PhD Researcher, Food Critic and Nutrition Enthusiast

I have struggled with food and weight gain since I was a teenager. This became especially important when I had to cook for a family with two children who had to eliminate gluten and dairy for health reasons. Being a professional researcher, I have made it my personal science project to learn as much as possible about food and nutrition. I was thrilled to learn that Megan was sitting on a treasure trove of recipes for baked goods that are whole foods without wheat, dairy or refined sugar. By broadly publishing Megan’s unique recipes, I want to change the ways families view gluten-free, dairy-free and sugar-free baking from weird to mainstream, from tasteless to tasty. I want everyone to have their cake, eat it and feel good about it too!

“After traveling to many corners of the world, I have come to realize the important role that food plays in forming a deeper connection with one another. It is the center of community and most importantly, it’s a universal language. As the social media manager, I focus on connecting with our followers from around the globe and sharing a slice of Megan’s latest bakes with the ever growing community we have built. My passion for content creation and creative thinking led me to pursue a certificate in Digital Marketing from Diablo Valley College. My goal is to welcome every single one of you to the online community with open arms and fill your life with sweets you can eat.”

Stephany Buswell
Master Baker and Recipe Tester.

Stephany has been in the baking industry since the early '70s with roots in natural foods baking with whole grains, honey, and oil and eventually the fine art of French baking. After 20 years of baking she became a instructor at Cabrillo College and ran The Buttery, a renowned bakery in Santa Cruz, California. She achieved her Master Baker certification in 2000. In 2017 Stephany was inducted into the prestigious professional group called Les Dames de Escoffier. She was also on the food Network in Holiday Baking Championship season 4 and made it to the final three.
“Megan has been a teacher for me as well by showing me the amazing delicious treats that can be made without using sugar, traditional flours and dairy products. I’m proud and thrilled to be part of such an innovative and revolutionary style of baking.”

Starting out in video, Ariel ended up finding his passion in photography; specifically food. While not a baker himself, he loves trying Megan’s bakes “because that bit is fluffin’ tasty!” Together, the team and Ariel work to create visuals of our “Sweets You Can Eat” that encourage you to make your own.

Born in California. Raised overseas. Brian currently reside in the San Francisco Bay Area. He enjoys many types of photography and loves meeting new folks, learning new skills, and collaborating on projects. His photography really brings our baking to life. And a huge plus is that he really loves Megan’s cats!

We double check their home baked products for quality and consistency to ensure that the baked goods came out as Megan initially developed them.
